Fluffy Strawberry Ice Cream

A few months ago, Andrew and I discovered an unused gift card from our wedding (don't you love it when that happens?) so we decided to spend it on an ice cream maker. Totally worth it! We love it!
Tonight, we made some Strawberry Ice Cream, but we made a mistake... A mistake that would change the course of our lives forever... Are you ready for it? Instead of using heavy cream, like the recipe calls for, we used whipping cream. The result? Creamy, fluffy, goodness! Try it out!

1 1/2 c. Fresh strawberries hulled (you can use frozen strawberries)
3/4 c. Whole milk
2/3 c. Granulated sugar
Pinch salt
1 1/2 c. Whipping cream
1 1/2 tsp. Pure vanilla extract

1. Chop up strawberries
2. Use a hand mixer or wire whisk to combine the milk, sugar, and salt until the sugar is dissolved. Stir in whipping cream and vanilla. Stir in strawberries. Cover and refrigerate for 1-2 hours or over night.
3. Pour mixture into frozen Cuisinart ice cream maker bowl (that's what I have) and let mix until thickened (about 20 minutes).

YUM!
Imagine adding some cookies in there! Mmmmmmm...
